I’ve not done a food post before but I really I like this recipe and so thought I’d share with you all. If you took out the eggs and replaced with dumplings you could have a nice vegan dish. Alternatively, it could be a could recipe with bacon in it, though I don’t eat red meat so I have to guess here.

1 tbsp olive oil
1 clove garlic
1/2 onion, peeled and diced
2 medium green/ red pepper
2 cans diced tomatoes
2 tbsp tomato purée
1 tsp chilli powder
1 tsp cumin
1 tsp paprika
Pinch cayenne pepper
Pinch sugar
Salt and pepper, to taste
5-6 eggs

Heat pan to medium heat. Warm olive oil and onions and sauté for a few minutes until softened. Add garlic and sauté until fragrant.

Add peppers and sauté for 5-7 mins until soft.

Add tinned tomatoes and purée to the pan and stir. Add spices and sugar sir and simmer for 5-7 mins until mix reduces.

Add salt and pepper to taste. Sample and add more spice if needed.

Crack eggs one at a time over the mixture, positioned evenly, 4 or 5 eggs round the edge and one in the middle.

Cover pan and allow to simmer for 10-15 mins until eggs are cooked through.

Serve hot with bread and salad.
